Chocolate breakfast smoothie bowl (raw, vegan and gluten free)

Breakfast is my favorite meal of the day and I like to have plenty of options when it’s time for it! However for me, breakfast has to be rich in nutrients, healthy and hearty, first of all because when I wake up I’m very hungry and second because the hours that follow it, are the most demanding of the day as I have to go to work and do thousands of things before and after it.

One of the meals I often have for breakfast is this chocolate smoothie because it’s absolutely delicious! Additionally it’s made of 100 % raw, unprocessed ingredients, it has a light and creamy mousse -like texture, it’s rich in nutrients, vitamins and beneficial omega – 3 fatty acids as well as fibers that keep me full for hours after consuming it.

Especially after my morning workout when I am even hungrier, I garnish my smoothie bowl with plenty of cereals, fruits and nuts.

Ingredients

  • 1 tbsp flaxseeds
  • 1 tbsp chia seeds
  • 1 tbsp sunflower seeds, peeled
  • ½ cup water or vegan milk or vegan kefir
  • 1 tsp raw carob powder
  • 1 tbsp unsweetened cocoa
  • 1 tbsp blond raisins or 1-2 dates
  • 1 ripe banana
  • ¼ cup strawberries (4-5)
  • 1 tsp wheat grass powder (optional)
  • ½ tsp cinnamon

For garnish

Granola, strawberries, banana slices, kiwi slices, nuts

Method

  1. The night before or at least half an hour before breakfast, mix the seeds in a bowl with ½ cup of water or vegan milk of your choice and leave in the refrigerator to soak. I usually soak my seeds overnight because they soften and thus add a wonderful, creamy texture to my smoothie smoothie.
  2. Put the seeds with the liquid in the blender and add the remaining ingredients. Blend at high speed until a thick cream has been formed. In my blender (which is a regular one) it doesn’t take more than 1-2 minutes.
  3. Serve immediately and garnish with breakfast cereals, fruits and nuts of your choice.

Persimmon oat breakfast bowl - Vegan in Athens

Delicious breakfast bowl with fresh nut milk, rolled oats and persimmon

Breakfast is my favorite meal of the day! Generally I love to wake up well before the time I have to leave for work so I can relax and enjoy a cup of tea, beautiful music, maybe a book and of course a walk with my dog. Besides after such a calming morning routine even a tough work seems to be much easier!

Usually during winter, my breakfast meal consists of cooked, unprocessed grains such as rolled oats, buckwheat or zea together with a fresh fruit and some nuts. Today I combined organic rolled oats, pistachios and fresh almond milk. In order to avoid adding extra sweeteners I garnished my oats with a very ripe persimmon -maybe my favorite winter fruit. I can say for sure that this was one of the best breakfast bowls I‘ve ever tasted. Each bite was rich, hearty and creamy owing to the nut milk, with some crunchy explosions of nuts and a mild sweet, exotic and fruity taste.

I think that this is what it takes to start a day in a good and happy way!

Γευστικό πρωινό με φρέσκο γάλα καρπών, νιφάδες δημητριακών και λωτό - Vegan in Athens

Ingredients

  • ½ cup grain flakes (such as rolles oats or buckwheat)
  • 1 tbsp grated coconut
  • 1 cup nut milk of your choice (such as almond milk or coconut milk)
  • 1 persimmon very ripe
  • 2-3 tbsp grated nuts (walnuts or pistachios)
  • 1 tbsp chia seeds or flax seeds(optional)

Method

  1. In a small saucepan, add the almond milk and bring to boil.
  2. Add the rolled oats, the chia seeds and the grated coconut, stir and turn off the heat. Allow to stand for 5-10 minutes.
  3. Cut the persimmon in half and scoop out the inner flesh from each half.
  4. Serve the oats in a bowl garnished with the nuts and the persimmon.
  5. Enjoy!
